Hello,

Is there any way the chef that made the chicken curry on Saturday night can post up the recipe? It was amazingly good (and I just watched Top Chef and want tasty foods)!

And if anything, just look up recipes for Thai curry, since that's what it was. I can't remember if it was Red or Yellow curry though, but they're both delicious.

Knowing Thorn, probably Red.

Just get some cans of Red Curry Paste, and pretty much follow the directions. I think they say use 2 cans (or whatever the equivelant cup-age of that is) of coconut milk, but I usually use less because I like it pretty spicy. There are a wide range of vegetables you can put in. I recommend carrots and onions for sure. Any kind of pepper works well, red or golden potatos work very well, celery is good, I've even gotten away with eggplant, zucchini, and mushrooms before.

If you can track down Other Mike, he might have more specific answers, as he is a bit more experienced with such things.

If the Red curry is too spicy or intense, switch to yellow, it works EXACTLY the same, but isn't as ferocious at times.
Also, I strongly recommend trying Yellow Sour Curry, it's pretty much great.

Groovy. The curry we had was a very intense yellow color (and was tolerably spicy), so can I assume it was indeed yellow curry?

Thank you for the suggestions. Now I'll get my friends that actually cook to prepare some for me ^_^
