Since scorpions are pretty much the evilest looking bug you can find, I think they should be in a game where you are the evilest person.
We could always replace the beetle with a scorpion....or just include him as a new creature.
Or maybe a certain creature can summon scorpions. After a while, the scorpions disappear.

Is the Maiden being introduced into DK3? If so it would be pretty cool for her to be able to summon scorpians to fight for her at a high level.

There is nothing wrong with poison that deals damage over time, as long as not every single creature that uses such an attack gets a different unique spell ability for it....
Spiders, Scorpions, Rogues, whatever uses Poison should simply use the same melee poison attack spell.
As for scorpions, they would be nice to add alongside flies, bugs, and spiders. More insects ftw! They should be weak though, perhaps only slightly tougher than spiders.
Stats:
Health: Lol.
Attack: Lol.
Armor: Average (carapace)
Accuracy: Low / Average
Dexterity: Low / Average
Speed: Average
1 > Melee hit
3 > Poison Attack
7 > Freeze (paralize, again, doesnt need a unique spell for it in my opnion)
useless like the other seconds, they are only usefull in early levels but would always form a danger to imps when randomly encountered.
Could also be noted there could be a big brother version, a giant black Kaizer scorpion that lurks in the deep and cant be obtained through portals.
Another option could be scorpionmen from Mythology (like the maiden: lowerbody of a scorpion, upperbody of a man). In that case they could have a simular summoning ability with scorpions as a Maiden could have with spiders.

That looks good to me, I would consider giving them more accuracy, however that would depend on the effectiveness of the poison.
Using DzjeeAr's ideas;
Birth/Level 1
Attack (claw attack)
Attacks opponent by pinching with claws, does mild melee damage.
Level 3
Poison Attack
Strikes enemy with the 'sting' at the end of the metasoma (tail), causes mild melee damage and poisons enemies not immune to or protected against poison.
Level 7
Freeze
Emits a beam of ice from it's mouth and freezes enemy, this should have a medium-length cool-down time.
